1/2 cup plus 1 tbsp cider vinegar
1 tablespoon Dijon mustard
1 tsp minced shallot
1/2 tsp honey
6 tablespoons extra-virgin olive oil
Salt and freshly ground pepper
In a bowl, combine vinegar, Dijon mustard, minced shallot and honey. Gradually whisk in extra-virgin olive oil. Season with salt and freshly ground pepper.
